Makes 16-18 cookies
2 large eggs
½ teaspoon salt
3 ¾ cups powdered sugar
1 cup unsweetened cocoa powder
2 teaspoons vanilla extract
3 tablespoons Gladstone Dark Lager
1 cup semi sweet chocolate chips
Separate the eggs and place egg yolks aside.
Add the salt to the whites and beat the whites until light and frothy.
Add ½ cup powdered sugar to the whites and beat until firm.
Add the remaining powdered sugar and cocoa powder, and then stir until combined.
Stir in the beer and egg yolks until well combined. Stir in the semi sweet chocolate chips.
Line a baking sheet with parchment paper. Scoop balls of cookie dough onto the parchment paper giving plenty of space between each cookie.
Freeze for 10 to 12 minutes. Preheat the oven to 375 F (190 C)
Bake for 14 minutes.
lPull the parchment onto the counter to allow the cookies to cool
